Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla, lemon zest, and lemon juice.
  5. Gradually mix in the dry ingredients until just combined. Fold in the grated zucchini.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.
