These light choux pastries are an ideal way to enjoy a cooling lemon cream filling, perfect for a refreshing treat.

Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 cup sugar
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, combine water and butter; bring to a boil.
  3. Stir in flour until a ball forms; remove from heat.
  4. Add eggs one at a time, beating well after each addition.
  5. Drop spoonfuls of dough onto a baking sheet.
  6. Bake for 20-25 minutes until golden brown.
  7. For the filling, mix sugar, lemon juice, lemon zest, and set aside.
  8. Let pastries cool, then fill with lemon cream.
