Loaded Potato Taco Bowl

A hearty and indulgent Loaded Potato Taco Bowl featuring a delicious combination of turkey bacon and chicken ham.

  • 2 large russet potatoes
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and poke holes in them with a fork; bake for 45-60 minutes until tender.
  3. In a skillet, cook the turkey bacon until crispy, then crumble it.
  4. Once the potatoes are cool enough to handle, cut them in half and scoop out some of the flesh.
  5. Mix the scooped potato with the chicken ham, cheese, sour cream, paprika, salt, and pepper.
  6. Fill the potato skins with the mixture and top with crumbled turkey bacon and green onions.
  7. Return to the oven for 10-15 minutes until heated through and cheese is melted.

Notes

  • For a vegetarian option, omit the turkey bacon and chicken ham.
  • Customize with your favorite toppings like jalapeños or salsa.
