- 12 ounces ziti pasta
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup chopped bell peppers
- 1 cup chopped zucchini
- 1 cup chopped spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- Cook the ziti pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add bell peppers and zucchini, cooking until tender.
- Stir in the spinach until wilted.
- In a large bowl, combine cooked pasta, sautéed veggies, marinara sauce, ricotta, and half of the mozzarella and Parmesan cheeses.
- Transfer the mixture to a baking dish and top with the remaining mozzarella and Parmesan.
- Bake for 25-30 minutes until the top is golden and bubbly.
- Allow to cool slightly before serving.

- This dish can be made ahead and stored in the refrigerator for up to 2 days before baking.
