Louisiana Red Beans and Rice

A comforting and hearty dish that brings a taste of Louisiana to your table with a healthier twist using turkey bacon.

Ingredients

  • 1 pound red beans
  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 2 cups cooked rice

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onion, celery, and bell pepper until soft.
  3. Add garlic and cook for an additional minute.
  4. Stir in the red beans, chicken broth, Cajun seasoning, smoked paprika, and black pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 1.5 to 2 hours, until the beans are tender.
  6. Shred the cooked turkey bacon and stir it back into the pot.
  7. Serve over cooked rice.

Notes

  • For a spicier dish, add more Cajun seasoning or hot sauce.
  • This dish pairs well with cornbread.
