- 1 pound red beans
- 4 slices turkey bacon
- 1 onion, diced
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 2 cups cooked rice
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, sauté the onion, celery, and bell pepper until soft.
- Add garlic and cook for an additional minute.
- Stir in the red beans, chicken broth, Cajun seasoning, smoked paprika, and black pepper.
- Bring to a boil, then reduce heat and let simmer for about 1.5 to 2 hours, until the beans are tender.
- Shred the cooked turkey bacon and stir it back into the pot.
- Serve over cooked rice.
