- 1 cup red kidney beans
- 1 cup long-grain rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- 4 cups vegetable broth
- Rinse and soak the kidney beans overnight.
- In a pot, heat olive oil over medium heat and sauté onion, garlic, and bell pepper until soft.
- Add cayenne pepper, thyme, and soaked beans, stirring for 2 minutes.
