  • 1 onion, chopped

  • 1 bell pepper, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 4 cups vegetable broth

Instructions

  1. Rinse and soak the kidney beans overnight.
  2. In a pot, heat olive oil over medium heat and sauté onion, garlic, and bell pepper until soft.
  3. Add cayenne pepper, thyme, and soaked beans, stirring for 2 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 1.5 hours until beans are tender.
  6. Cook the rice according to package instructions separately.
  7. Serve the beans over the rice.
