Luscious Lemon Raspberry Swirl Cheesecake

A creamy cheesecake swirled with tangy lemon and sweet raspberries.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract, eggs, lemon juice, and lemon zest, mixing until combined.
  5. Pour half of the batter over the crust, dollop spoonfuls of raspberry puree on top, and swirl with a knife.
  6. Repeat with remaining batter and raspberry puree.
  7. Bake for 55-60 minutes until the center is set.
  8. Cool to room temperature then refrigerate for at least 4 hours before serving.

Notes

  • Serve with fresh raspberries for a garnish.
  • To prevent cracks, try baking in a water bath.
