  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 egg, beaten for egg wash

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Add cold butter and mix until the mixture resembles coarse crumbs.
  4. Stir in heavy cream, lemon zest, and lemon juice until just combined.
  5. Turn the dough onto a floured surface, gently knead, and shape into a circle about 1 inch thick.
  6. Cut into wedges and place on a baking sheet lined with parchment paper.
  7. Brush the tops with beaten egg.
  8. Bake for 15-20 minutes until golden brown.
  9. Remove from the oven and let cool slightly before serving.
