Maple Butternut Squash Soup

  • 2 carrots, chopped
  • 4 cups vegetable broth
  • 1/4 cup maple syrup
  • 1 teaspoon salt

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and carrots, cooking until soft.
  2. Add butternut squash, vegetable broth, maple syrup, salt, pepper, cinnamon, and nutmeg. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes until squash is tender.
