3 ripe bananas
1/2 cup maple syrup
1/3 cup melted butter
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups all-purpose flour
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
In a mixing bowl, mash the ripe bananas until smooth.
Add maple syrup, melted butter, egg, and vanilla extract to the bananas and mix until combined.
In another bowl, whisk together baking soda, salt, cinnamon, and flour.
Gradually incorporate the dry ingredients into the wet ingredients until just combined.
Pour the batter into the lined muffin tin, filling each cup about 2/3 full.
Bake for 18-20 minutes or until a toothpick comes out clean.
Let cool for a few minutes before transferring to a wire rack.
Notes
For an extra touch, sprinkle some cinnamon sugar on top before baking.
These muffins can be frozen for up to three months.
