Ingredients

  • 200g mixed dried fruit
  • 100g unsalted butter
  • 100g brown sugar
  • 2 large eggs
  • 100g self-raising flour
  • 1 tsp mixed spice powder
  • 50g chopped nuts
  • 1 tbsp brandy

Instructions

  1. Preheat the oven to 150°C (130°C fan).
  2. Line a muffin tin with paper cases.
  3. Melt the butter and sugar together.
  4. Stir in the eggs and brandy.
  5. Mix in the flour, spices, dried fruit, and nuts until combined.
  6. Spoon the mixture into the paper cases.
  7. Bake for 20-25 minutes until firm to touch.
