1 pound shrimp, peeled and deveined
4 cups mixed greens
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/4 cup feta cheese, crumbled
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
In a skillet, heat olive oil over medium heat. Add shrimp and season with salt, pepper, and oregano. Cook until shrimp are pink and opaque, about 3-5 minutes.
Add the cooked shrimp to the salad and drizzle with lemon juice. Toss gently to combine.
Notes
For added flavor, consider marinating the shrimp in lemon juice and garlic for an hour before cooking.
