  • 1 pound shrimp, peeled and deveined
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a skillet, heat olive oil over medium heat. Add shrimp and season with salt, pepper, and oregano. Cook until shrimp are pink and opaque, about 3-5 minutes.
  3. Add the cooked shrimp to the salad and drizzle with lemon juice. Toss gently to combine.
