Mini Pineapple Upside Down Cheesecakes

These individual cheesecakes are a delightful twist on the classic pineapple upside down cake, perfect for any occasion.

Ingredients

  • 1 cup crushed pineapple, drained
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1 1/2 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, combine the crushed pineapple, brown sugar, and melted butter. Mix well.
  3. In another bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Press the graham cracker crumbs into the bottom of lined cupcake tins.
  6. Pour the pineapple mixture over the crusts, followed by the cheesecake batter.
  7. Bake for 18-20 minutes, or until set. Let cool before serving.

Notes

  • For added flavor, consider adding a splash of rum into the batter.
