Mouthwatering Cinnamon Roll Cookies

Deliciously soft and gooey cinnamon roll cookies that are easy to make at home.

  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon for filling
  • 1 cup powdered sugar for icing
  • 2 tablespoons milk for icing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add in the egg and vanilla extract, mixing until well combined.
  5. Gradually mix in the dry ingredients until a dough forms.
  6. In a small bowl, combine brown sugar and cinnamon for the filling.
  7. Roll out the dough into a rectangle, spread the filling mixture over the surface, and roll it up tightly.
  8. Slice the rolled dough into rounds and place them on a baking tray lined with parchment paper.
  9. Bake for 12-15 minutes or until golden brown.
  10. While the cookies cool, mix powdered sugar and milk to create the icing and drizzle over the cookies.

Notes

  • For extra flavor, consider adding nuts or raisins to the filling.
  • Make sure to not overbake the cookies to keep them soft.
