- 8 ounces lasagna noodles
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- In a large pot, heat olive oil over medium heat. Add turkey bacon, and cook until crispy.
- Add onion and garlic, cooking until softened.
- Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and black pepper.
- Bring to a boil, then reduce heat and add lasagna noodles.
- Simmer until noodles are cooked, about 10-12 minutes.
- Stir in spinach until wilted, then remove from heat.
- Serve topped with ricotta and mozzarella cheese.
Notes
- For a vegetarian version, omit turkey bacon and chicken ham.
- Add additional vegetables for more flavor.
