Mouthwatering One Pot Lasagna Soup

A delicious and hearty lasagna soup that combines turkey bacon and chicken ham.

  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon, and cook until crispy.
  2. Add onion and garlic, cooking until softened.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and black pepper.
  4. Bring to a boil, then reduce heat and add lasagna noodles.
  5. Simmer until noodles are cooked, about 10-12 minutes.
  6. Stir in spinach until wilted, then remove from heat.
  7. Serve topped with ricotta and mozzarella cheese.

Notes

  • For a vegetarian version, omit turkey bacon and chicken ham.
  • Add additional vegetables for more flavor.
