- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons vegetable oil
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- salt to taste
- black pepper to taste
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the beef cubes and brown on all sides.
- Stir in the chopped onions and minced garlic; cook until the onions are translucent.
- Add the beef broth, carrots, potatoes, Worcestershire sauce, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 2 to 3 hours or until the beef is tender.
- Remove bay leaves before serving.
