  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until tender.
  3. Stir in garlic and cook for 1 more minute.
  4. Add chicken broth, thyme, and basil; bring to a boil.
  5. Incorporate the gnocchi and cook for about 5 minutes.
  6. Reduce heat, stir in the cream and spinach, and cook until spinach wilts.
  7. Season with salt and pepper to taste.
