One-Pot Spicy Cajun Sausage Pasta Recipe

  • 12 ounces penne pasta
  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 cup heavy cream
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add smoked sausage and cook until browned.
  3. Add bell pepper, onion, and garlic; sauté until softened.
  4. Stir in diced tomatoes, chicken broth, Cajun seasoning, and red pepper flakes.
  5. Bring to a boil, then add penne pasta.
  6. Reduce heat, cover, and simmer until pasta is cooked.
  7. Once pasta is cooked, stir in heavy cream and cook for an additional 2 minutes.
  8. Season with salt and black pepper to taste.
  9. Garnish with fresh parsley before serving.
