Pecan Pie Cheesecake

An indulgent blend of cheesecake and pecan pie that satisfies every sweet tooth.

  • 2 cups crushed graham crackers
  • 1 cup pecans, chopped
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar
  • 1 cup corn syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, chopped pecans, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and granulated sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Pour the cream cheese mixture over the crust.
  6. In another bowl, mix brown sugar, corn syrup, cinnamon, and salt until well combined.
  7. Pour the pecan topping over the cheesecake layer.
  8. Bake for 50 minutes, or until center is set. Allow to cool before refrigerating for at least 4 hours.
  9. Serve chilled, garnished with whipped cream if desired.

Notes

  • For a richer flavor, use toasted pecans in the crust.
  • This cheesecake can be made a day in advance for better flavor.
