Poblano Chicken Enchiladas

  • 2 cups shredded cooked chicken
  • 1 cup poblano peppers, roasted and diced
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil and sauté the diced poblano peppers until soft.
  3. In a mixing bowl, combine shredded chicken, sautéed poblano, sour cream, cumin, garlic powder, and onion powder.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Place rolled tortillas in a baking dish lined with enchilada sauce.
  6. Top with remaining enchilada sauce and shredded cheese.
  7. Bake for 20-25 minutes until cheese is bubbly.
