Pumpkin Pancakes (Thick & Flavorful!)

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup maple syrup
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, combine pumpkin puree, milk, eggs, maple syrup, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with additional maple syrup if desired.

Notes

  • For a less sweet pancake, reduce the amount of maple syrup.
  • These pancakes can be made ahead and reheated in a toaster or microwave.
