Quick Coconut Curry Soup with Dumplings

A rich and comforting coconut curry soup packed with flavor and served with soft dumplings.

Ingredients

  • 1 tablespoon coconut oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons curry powder
  • 1 can (14 ounces) coconut milk
  • 4 cups vegetable broth
  • 1 cup carrots sliced
  • 1 cup bell pepper diced
  • 2 cups spinach fresh
  • 1 batch pre-made dumplings
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the onion, garlic, and ginger; sauté until fragrant.
  3. Stir in the curry powder and cook for another minute.
  4. Add in the coconut milk and vegetable broth, stirring to combine.
  5. Add carrots and bell pepper; simmer for 10 minutes.
  6. Stir in spinach and dumplings; cook until dumplings are heated through.
  7. Season with salt and pepper before serving.

Notes

  • This soup can be made ahead of time and reheated before serving.
  • Adjust the level of spice by adding more or less curry powder.
