Quick Skillet-Toasted Veggie Paneer Sandwich

  • 4 slices bread
  • 100 grams paneer
  • 1 cup mixed vegetables (bell peppers, carrots, onions)
  • 2 tablespoons butter
  • 1 teaspoon black pepper

Instructions

  1. Preheat a skillet on medium heat.
  2. Butter one side of each slice of bread.
  3. Place one slice of bread, butter-side down, onto the skillet.
  4. Add a layer of mixed vegetables and paneer on top.
  5. Season with black pepper.
  6. Top with another slice of bread, butter-side up.
  7. Cook until golden, then flip carefully and brown the other side.
  8. Remove from heat, cut in half, and serve warm.
