Quinoa Salad with Roasted Vegetables

A delicious and healthy quinoa salad topped with roasted vegetables.

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, chopped
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the quinoa under cold water and drain.
  3. In a pot, combine quinoa and vegetable broth; bring to a boil.
  4. Reduce heat, cover, and simmer for about 15 minutes.
  5. Meanwhile, place chopped vegetables on a baking sheet and drizzle with olive oil, salt, pepper, garlic powder, and cayenne pepper.
  6. Roast in the oven for 20-25 minutes until tender.
  7. Once quinoa is cooked, fluff with a fork and mix with roasted vegetables.
  8. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add lemon juice before serving.
  • Feel free to substitute vegetables based on seasonal availability.
