  • 1 whole chicken
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 lemon (cut into quarters)
  • 2 sprigs of fresh rosemary

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, salt, black pepper, garlic powder, onion powder, and dried thyme.
  3. Pat the chicken dry and rub the olive oil mixture all over the chicken, including under the skin.
  4. Stuff the cavity with lemon quarters and rosemary.
  5. Place the chicken on a roasting pan and roast in the preheated oven for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10 minutes before carving.
