2 cups Brussels sprouts, halved
1 cup carrots, sliced
1 cup bell peppers, chopped
1 cup zucchini, diced
3 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
1 cup quinoa, cooked
1 avocado, sliced
1/4 cup feta cheese, crumbled
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss the Brussels sprouts, carrots, bell peppers, and zucchini with olive oil, garlic powder, salt, and pepper.
Spread the vegetables on a baking sheet and roast for 25-30 minutes or until tender and slightly caramelized.
Meanwhile, cook quinoa according to package instructions.
Once the veggies are done, assemble the bowls by placing quinoa at the bottom and topping it with roasted vegetables, sliced avocado, and crumbled feta cheese.
