Seafood Stuffed Potatoes

  • 4 large russet potatoes
  • 1 cup seafood mix (shrimp, crab, and scallops)
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and poke holes with a fork. Bake for 45-60 minutes until soft.
  3. In a bowl, combine seafood mix, cream cheese, cheddar cheese, green onions, lemon juice, garlic powder, paprika, and salt.
  4. Once potatoes are cooked, slice them in half and scoop out some of the insides.
  5. Mix the scooped potato with the seafood mixture and stuff back into the potato skins.
  6. Bake for an additional 15 minutes until heated through.
  7. Serve warm and enjoy!
