  • 4 large eggs
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add onions and bell pepper; sauté until soft.
  3. Add garlic, cumin, and paprika; cook for 1 minute.
  4. Stir in diced tomatoes and simmer for 10 minutes.
  5. Make wells in the mixture and crack eggs into them. Cover and cook until eggs are set.
  6. Top with cooked bacon and parsley before serving.
