  • 4 large eggs
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, cook the turkey bacon until crispy and set aside.
  2. In the same skillet, sauté onion and garlic until softened.
  3. Add diced chicken ham and cook for a few minutes.
  4. Stir in diced tomatoes, cumin, paprika, salt, and pepper.
  5. Simmer for 10 minutes until thickened.
  6. Make wells in the mixture and crack eggs into the wells.
  7. Cover and cook until eggs are set to your liking.
  8. Garnish with fresh parsley before serving.

Notes

  • Serve with crusty bread for dipping.
  • This dish can be cooked in a cast iron skillet for better heat retention.
