Shakshuka

Shakshuka is a delightful dish of poached eggs in a spicy tomato sauce, perfect for any meal of the day.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can (28 ounces) crushed tomatoes
  • 6 large eggs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and red bell pepper, and sauté until soft.
  2. Add minced garlic, cumin, paprika, and cayenne pepper; cook for another minute.
  3. Stir in crushed tomatoes and simmer for 10 minutes, seasoning with salt and pepper.
  4. Make small wells in the sauce and crack an egg into each well.
  5. Cover the skillet and cook until the eggs are just set.
  6. Garnish with fresh parsley before serving.
