Slow Cooker Beef and Broccoli

This is a delicious slow cooker recipe for beef and broccoli that is perfect for a weeknight dinner.

  • 4 cups broccoli florets
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. In a slow cooker, combine the sliced flank steak, beef broth, soy sauce, brown sugar, garlic, and ginger.
  2. Cook on low for 6-8 hours or on high for 4-6 hours.
  3. About 30 minutes before serving, add the broccoli florets.
  4. In a small bowl, mix the cornstarch with water and stir into the slow cooker to thicken the sauce.
  5. Serve over rice or noodles.

  • For best results, slice the flank steak against the grain.
  • You can add more vegetables like bell peppers or carrots if desired.
