  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 ounces turkey bacon, chopped
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 cups carrots, sliced
  • 1 cup pearl onions, peeled
  • 2 cups red wine
  • 2 cups beef broth
  • 3 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crisp, then transfer to the slow cooker.
  2. In the same skillet, add olive oil and brown the beef in batches, then add to the slow cooker.
  3. Add garlic, carrots, pearl onions, red wine, beef broth, tomato paste, thyme, and bay leaf to the slow cooker.
  4. Season with salt and pepper.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. Discard the bay leaf before serving.
