Slow Cooker Chicken Pot Pie

A comforting and easy-to-make chicken pot pie using your slow cooker.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • 1 cup diced onion
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1 can refrigerated pie crusts

Instructions

  1. Heat the slow cooker on low.
  2. Add the chicken, carrots, potatoes, peas, onion, chicken broth, thyme, and pepper into the slow cooker.
  3. Stir to combine the ingredients.
  4. Cover and cook on low for 6-8 hours or until the chicken is cooked through.
  5. Shred the chicken and stir back into the mixture.
  6. Roll out the pie crust and place on top of the filling.
  7. Cover and cook for an additional 30 minutes until the crust is golden brown.
