- 1 pound boneless, skinless chicken breasts
- 1 cup chopped carrots
- 1 cup diced potatoes
- 1 cup frozen peas
- 1 cup diced onion
- 2 cups chicken broth
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 1 can refrigerated pie crusts
- Heat the slow cooker on low.
- Add the chicken, carrots, potatoes, peas, onion, chicken broth, thyme, and pepper into the slow cooker.
- Stir to combine the ingredients.
- Cover and cook on low for 6-8 hours or until the chicken is cooked through.
- Shred the chicken and stir back into the mixture.
- Roll out the pie crust and place on top of the filling.
- Cover and cook for an additional 30 minutes until the crust is golden brown.
