  • 2 pounds beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 hoagie rolls
  • 1 cup shredded provolone cheese

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Add onion and garlic on top of the beef.
  3. In a bowl, mix beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour over the meat.
  4. Cover and cook on low for 8 hours or until tender.
  5. Remove the beef, shred it, and return to the slow cooker to soak in the juices.
  6. Serve beef in hoagie rolls topped with provolone cheese.
  7. Optional: Toast the rolls before serving.

Notes

  • For extra flavor, add sliced bell peppers to the slow cooker.
  • Serve with a side of au jus for dipping.
