- 3 pounds beef chuck roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 4 cloves garlic, minced
- 2 onions, quartered
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Season the beef chuck roast with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the roast on all sides.
- Transfer the roast to the slow cooker.
- Add beef broth, Worcestershire sauce, garlic, onions, carrots, potatoes, thyme, and rosemary to the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once done, shred the beef with forks and serve with vegetables.
