Slow Cooker Pot Roast

  • 3 pounds beef chuck roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 cloves garlic, minced
  • 2 onions, quartered
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast on all sides.
  3. Transfer the roast to the slow cooker.
  4. Add beef broth, Worcestershire sauce, garlic, onions, carrots, potatoes, thyme, and rosemary to the slow cooker.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Once done, shred the beef with forks and serve with vegetables.

Notes

  • For extra flavor, marinate the beef the night before.
