Slow-Braised Beef Roast with Cranberry Balsamic Glaze

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 4 cloves garlic, minced

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large roasting pan, combine cranberry juice, balsamic vinegar, brown sugar, salt, and pepper.
  3. Add the beef roast to the pan, then sprinkle the onion and garlic around it.
  4. Cover the pan tightly with aluminum foil and place it in the oven.
  5. Braise for about 3 hours, or until the beef is tender.
  6. Remove from the oven and let it rest before slicing.
  7. Serve with the glaze from the pan.
