Spicy Peanut Soba Noodle Salad

A vibrant and refreshing salad that combines the nutty flavors of spicy peanut sauce with the texture of soba noodles and crunchy vegetables.

  • 8 ounces soba noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced bell peppers
  • 1 cup chopped cucumber
  • ½ cup chopped green onions
  • ½ cup fresh cilantro
  • ¼ cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha sauce

Instructions

  1. Cook the soba noodles according to package instructions, then rinse under cold water and drain.
  2. In a bowl, mix together peanut butter, soy sauce, rice vinegar, honey, sesame oil, and sriracha to create the sauce.
  3. In a large bowl, combine the cooked soba noodles, carrots, bell peppers, cucumber, green onions, and cilantro.
  4. Pour the sauce over the salad and toss to coat all ingredients evenly.
  5. Serve chilled or at room temperature.

Notes

  • This salad can be made a day in advance and stored in the refrigerator.
  • Adjust the spiciness level of the dressing by adding more or less sriracha.
