Spinach and Mushroom Alfredo Ravioli

A delightful and indulgent dish that combines the creamy richness of Alfredo sauce with the earthiness of spinach and mushrooms, all wrapped in tender homemade ravioli.

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  2. Add sliced mushrooms and cook until soft, about 5 minutes. Stir in fresh spinach and cook until wilted.
  3. In a bowl, combine ricotta cheese, grated Parmesan cheese, salt, and pepper. Add the cooked mushroom and spinach mixture and mix well.
  4. To make the pasta dough, mix flour and egg in a bowl until a dough forms. Knead until smooth.
  5. Roll out the dough and cut into circles. Place a spoonful of the filling on one half, fold, and seal the edges.
  6. Boil ravioli in salted water until they float, about 3-5 minutes.
  7. For the sauce, heat heavy cream in a saucepan and stir in additional Parmesan until melted and creamy.
  8. Serve the ravioli drizzled with Alfredo sauce.

Notes

  • For added flavor, consider including nutmeg in the Alfredo sauce.
  • Make sure to seal the ravioli tightly to prevent the filling from leaking during cooking.
