Spinach & Feta Stuffed Chicken Breasts

  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add spinach and cook until wilted.
  4. Remove from heat and mix in feta cheese.
  5. Cut a pocket in each chicken breast and fill with the spinach and feta mixture.
  6. Season the outside of the chicken with salt and pepper.
  7. Place in a baking dish and bake for 25-30 minutes until cooked through.
  8. Let rest for 5 minutes before serving.

Notes

  • For added flavor, marinate chicken in lemon juice for 30 minutes before stuffing.
