Sri Lankan Egg Curry

A delicious and aromatic Sri Lankan egg curry that brings exotic flavors to your table.

  • 6 large eggs
  • 2 tablespoons coconut oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green chilies, slit
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 can coconut milk
  • salt to taste

Instructions

  1. Boil the eggs until hard-boiled, about 10 minutes. Peel and set aside.
  2. In a pan, heat coconut oil and sauté onions until golden.
  3. Add garlic, ginger, and green chilies, cooking until fragrant.
  4. Stir in turmeric, red chili, and cumin powders.
  5. Pour in coconut milk and bring to a simmer.
  6. Add the boiled eggs to the sauce, simmering for an additional 5 minutes.
  7. Season with salt and serve hot.
