Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine strawberries and rhubarb with a tablespoon of sugar and set aside.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  4. In another bowl, mix the melted butter, eggs, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Gently fold in the strawberries and rhubarb.
  7. In a small bowl, mix brown sugar, flour, butter, and cinnamon to make the streusel topping.
  8. Divide the muffin batter into a greased muffin tin, then sprinkle streusel on top.
