- 2 Cornish game hens
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon sage
- 1 teaspoon thyme
- 1/2 cup breadcrumbs
- 1/4 cup chicken broth
- 1 tablespoon olive oil
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy, then remove and chop.
- Sauté the onion and garlic in the same skillet until translucent.
- Add the chicken ham and herbs to the skillet and cook for an additional 2 minutes.
- Mix in the breadcrumbs and chicken broth, then stir in the chopped bacon.
- Stuff the Cornish game hens with the mixture and secure with toothpicks.
- Rub the outside of the hens with olive oil, then season with salt and pepper.
- Place the hens in a roasting pan and cover with foil.
- Roast for 1 hour, removing the foil for the last 15 minutes.
- Let rest for 10 minutes before serving.
