Stuffed Cornish Game Hens

  • 2 Cornish game hens
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 1/2 cup breadcrumbs
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  3. Sauté the onion and garlic in the same skillet until translucent.
  4. Add the chicken ham and herbs to the skillet and cook for an additional 2 minutes.
  5. Mix in the breadcrumbs and chicken broth, then stir in the chopped bacon.
  6. Stuff the Cornish game hens with the mixture and secure with toothpicks.
  7. Rub the outside of the hens with olive oil, then season with salt and pepper.
  8. Place the hens in a roasting pan and cover with foil.
  9. Roast for 1 hour, removing the foil for the last 15 minutes.
  10. Let rest for 10 minutes before serving.

  • For extra flavor, consider adding chopped herbs to the breadcrumb mixture.
