Summer Tortellini Salad

A light and refreshing summer dish perfect for picnics or gatherings.

Ingredients

  • 2 cups cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, black olives, feta cheese, and basil.
  3. Add the cooled tortellini to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Best served cold.
  • Can be made a day in advance for easy prep.
