Super Green Sheet Pan Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 cup green beans, trimmed
  • 2 cups zucchini, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a sheet pan, combine all vegetables and drizzle with olive oil, salt, and pepper.
  3. Toss to coat and spread in an even layer.
  4. Roast for 20-25 minutes or until vegetables are tender.
  5. Transfer to a pot, add vegetable broth, and bring to a simmer.
  6. Stir in the kale and cook for an additional 5 minutes.
