  • 4 pounds beef short ribs
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 2 cloves garlic, roasted
  • 1/4 cup chives, chopped

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large oven-safe pot, heat vegetable oil over medium-high heat.
  3. Season the short ribs with salt and pepper, then brown them in the pot on all sides. Remove and set aside.
  4. Add onion, carrots, and garlic to the pot, sauté until softened.
  5. Stir in the beef broth, red wine, tomato paste, and thyme. Bring to a simmer.
  6. Return the ribs to the pot, cover, and transfer to the oven. Cook for about 3 hours or until tender.
  7. While the ribs are cooking, prepare the garlic mashed potatoes by boiling them until tender.
  8. Drain, then mash the potatoes with cream, butter, roasted garlic, salt, and pepper.
  9. Stir in chives before serving.
