  • 1 can (13.5 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a large skillet, heat a bit of oil over medium heat.
  2. Add the onion and garlic; sauté until soft.
  3. Stir in the bell peppers and continue to cook for another 2-3 minutes.
  4. Add the red curry paste and stir to combine.
  5. Pour in the coconut milk, fish sauce, and brown sugar; mix well.
  6. Add the shrimp and cook until they turn pink, about 3-5 minutes.
  7. Remove from heat and stir in lime juice and cilantro.
