- 1 pound chicken breast, cooked and shredded
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can green chilies
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup corn, frozen or fresh
- 1 cup sour cream
- 1 cup shredded cheese, for topping
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until soft.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the shredded chicken, green chilies, cumin, and oregano; cook for 2-3 minutes.
- Add the white beans, chicken broth, and corn to the pot. Bring to a simmer and cook for 20 minutes.
- Remove from heat and stir in the sour cream until well combined.
- Serve hot and top with shredded cheese.
Notes
- This chili can be made ahead of time and tastes even better the next day.
- Feel free to adjust the spice level by adding jalapeños or more green chilies.
