  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup diced bell peppers
  • 1/2 cup chopped fresh spinach

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper.
  3. Stir in the mozzarella, cheddar, and feta cheeses until well combined.
  4. In an oven-safe skillet, heat the olive oil over medium heat and add the diced bell peppers and spinach, cooking until softened.
  5. Pour the egg mixture over the vegetables in the skillet, cooking for 2-3 minutes until the edges start to set.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata has risen and a toothpick comes out clean.
  7. Let it cool slightly before slicing and serving.
