- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled feta cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup diced bell peppers
- 1/2 cup chopped fresh spinach
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper.
- Stir in the mozzarella, cheddar, and feta cheeses until well combined.
- In an oven-safe skillet, heat the olive oil over medium heat and add the diced bell peppers and spinach, cooking until softened.
- Pour the egg mixture over the vegetables in the skillet, cooking for 2-3 minutes until the edges start to set.
