Toasted Coconut Macadamia Pancakes

  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut, toasted
  • 1/2 cup macadamia nuts, chopped
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. Stir in the toasted coconut and chopped macadamia nuts.
  3. In a separate bowl, combine the milk, eggs, sugar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Heat a griddle or non-stick skillet over medium heat and grease lightly.
  6. Pour 1/4 cup of the batter onto the griddle for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  8. Serve warm with syrup.
