Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the grated zucchini, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Pour the batter into muffin tins and bake for 20-25 minutes.
  6. Cool before serving.
